A Perfect Summer Crisp

I love this recipe so much. It comes together so fast and when you pull it out of the oven, the warm fruit will fill your kitchen with the most amazing smell. There are so many options for fruit so use whatever you have on hand. My favorites crisps are always a combination of stone fruit but I often add in some fresh berries and it never fails to delight. Also if you are a fan of nuts adding some pecans to your topping is very delicious.

Ingredients for the fruit layer

6-8 cups of fruit cut into large bite size pieces.

2 tablespoons granulated sugar

1/2 teaspoon cinnamon

Juice of 1/2 a lemon

A pinch of salt

Ingredients for the topping

1 cup unbleached all-purpose flour

1 cup old fashioned oats

1 cup light brown sugar

1/2 teaspoon cinnamon

1 stick of butter, melted

Preparation

Preheat your oven to 375 degrees

I use a 9″ round baking dish but you certainly can use a 9 x 13 pan as well. I butter my dish before I put in but you can certainly use spray or skip all together.

Start by mixing your fruit, sugar, cinnamon, lemon and salt together. Place the mixture in the baking dish.

Add all your topping ingredients to a mixer and mix on low until just blended. Sprinkle crumble topping evenly over the fruit.

Place in the oven for approximately 40 minutes. Check after 30, sometimes if the fruit is really ripe it will cook up a bit faster. The most important part is that your crumble has a nice nutty color.

Please top with good quality vanilla ice cream because it is so remarkable all together.
